This is a rich, flavorful balsamic vinegar made by concentrating grapes carefully grown by the Raimondi family in the Modena region of northern Italy, adding fragrant wine vinegar made from the same grapes, and aging it in oak barrels.
The only raw materials are grapes harvested by the Raimondi family on their own farm. The farm is very busy during the harvest season in October. The harvested grapes are immediately pressed to make juice. The juice is boiled in a pot for one and a half to two days to become sweet grape concentrate. This concentrate is naturally fermented in a wooden barrel to become vinegar, which is the original balsamic vinegar. This is called Balsamic de Modena DOP. Soramits Balsamic Vinegar is called Balsamic de Modena IGP, and is a blend of 55% original Balsamic de Modena DOP and the remaining 45% wine vinegar, which is made by fermenting the same grape concentrate with natural bacteria. It is less expensive and has a more user-friendly flavor than DOP.
* Although it is listed as an antioxidant (sulfite) in the ingredients, it is an ingredient that must be added to adjust the fermentation process when fermenting concentrated grape juice to make wine or wine vinegar. It is recognized as suitable for consumption. It is not necessary to list it under the JAS law, but we believe it is more appropriate to list it.
